BLT Soup

5 Slices bacon, diced
2 Tbsp. margarine or butter
3 1/2 C. iceberg lettuce, julienne cut
5/8 C. flour
3 1/2 C. hot water
1Tbsp. + 1 Tsp. chicken base
3/4 C. chopped tomatoes
1 pinch ground nutmeg
1 pinch ground cayenne
1 C. hot 1/2 and 1/2 cream

-In kettle, cook bacon over medium heat about 10 minutes. Do not drain.
-Add butter and heat until melted.
-Stir in lettuce and saute 2 minutes.
-Blend in flour with a whisk. Stir about 2-3 minutes.
-Remove from heat.
-Add water, chicken base, tomatoes and seasonings.
-Return to heat and heat to boiling, stirring frequently.
-Simmer 6 minutes until thick.
-Add cream.
-Heat to simmer stirring frequently.

Garnish with crumbled bacon bits and serve with crusty bread.
